Life As We Know It
Spring is here and that means yardwork. Now when Doug and I got married, I made it really clear that I didn't want to do any yardwork. None. Especially pull weeds. It used to feel like a punishment growing up, when I was told to go pull weeds. I would only do it if my parents offered to pay me, and only then if there was something I really wanted to buy.
Well, life has changed a bit and I do pull weeds, although not often enough. I don't get paid for it, and there are a lot of things I want. What I do enjoy though is making our yard look nice. During the fall we pulled up all the plants in front of our house and it looks so bare. Earlier this week I found some great plants to put in their places. Cleyeras, zenias, and petunias to be exact. I am SO excited to have a blanket of color in front of my house. There will be bold pinks, dark blues and bright yellows, coupled with the beautiful shiney green leaves from the cleyaras. Things are in full bloom in the back yard too! We've got roses of all different colors, yellow and purple irises, white star-like flowers that I don't have a name for, and hydrangias.
We recently added a new color to the back yard, although it's a bit hard to spot sometimes. A few weeks ago, I added 18 (I think) goldfish to our little pond! I just love sitting outside on the swing watching the fish after I feed them. There is something peaceful and wonderful about simply enjoying nature.
Doug has started the garden again! This year he's planting tomatos, carrots, cucumers, squash, corn, potatos, beans, watermellon, basil, cilantro, oregano, sage..... and maybe a few more things that I can't remember. I think this year's garden is going to be big and delicious! We will also have our blueberries and figs, and possibly the muscadines. Yum! We've toyed with the idea of having chickens and a cow, but I could never have a pet that I eat later in life.
Overall, we are enjoying and loving life. :)

Product Spotlight: Adjustable Measuring Spoons
Pampered Chef. Have you heard of it? I have now joined the Pampered Chef Consultant family, thanks to the wonderful Jenny-Lynn Carden. Part of being a Pampered Chef Consultant means they give me the incredible, extremely cool kitchen gadgets they have to offer for next to nothing! I have been testing products like crazy, and let me tell you, I am in love.
I really want to share with you this incredible little treasure. Adjustable measuring spoons. Want to know what is so great about these? TWO SPOONS people! TWO SPOONS! That's it! If you're like me, you have three sets of measuring spoons, all of which have popped off the little ring and are now buried in the deepest corner of your cabinet space. You know, the corner that you're afraid to reach to because something might be living there? It's okay, we all have a corner or two like that.
These little beauties are adjustable, which means no more scrambling to find the right size spoon or half guessing that you really are only using an 1/8th of a teaspoon of chili powder. I used these the other night while making one of my favorite fish recipes. (Don't worry, I'll share) This recipe uses lots of different spices with lots of different measurements. The Adjustable Measuring Spoons made it SO easy. Guess what? They even fit INSIDE THE JAR! How many times have you basil all over your counter top trying to get the right measurement? Okay, maybe I'm the only guilty one. Anyway, enough talk. Here they are. I present to you, the Adjustable Measuring Spoons. Do not let their humble appearance fool you. They are truly awesome.
And as I promised, here is one of our favorite dinner recipes.
Fish in a Flash
1/2 cup Panko bread crumbs
1 tsp dried minced onion
1/2 tsp lemon pepper seasoning
2 tsp dried parsley flakes
1 tsp garlic powder
1/2 tsp salt
1/4 tsp cayenne pepper
Tilapia/Cod/White Fish fillets
Brush fish with EVOO and coat with seasoning mixture. Pan fry on medium-high heat until cooked thoroughly. We like to serve this with a baked potato and green beans. Mmm!

Guess what? I'm back! Did you give up on me? The blog is taking on a whole new look and is still a work in progress, so check back periodically for updates on our fun little life.
